Sugar high forthcoming. Be warned!
With Memorial Day coming, everyone’s making barbecue and picnic plans. Well, everyone except me. I tend to forget all about it until the last second or just shrug it off, figuring that if worse comes to worst, I’ll just throw some meat on a fire and be done with it.
But for you lovely people who plan ahead, think about this delightful no-bake dessert for your get-together time. These bars are made of egg-free Oreo cookie dough and topped with thick white chocolate fudge.
This time of year, I really need the extra sugar hit. Our students are in standardized testing for weeks on end, and the resultant disrupted scheduling can be challenging when you’re in the same classroom with the same kids for several hours on end. I get so hungry, too. And I need to use the bathroom.
One of the golden perks of summer is that I can use the bathroom whenever I need to. 10 months out of the year, I hold it in. After all, a teacher can’t leave her students unattended. But for those two months, the bathroom is actually a possibility. Sometimes I go there just because I can, not because I need to.
TMI? Yeah, well, try being a teacher. We’re not allowed to pee. We’re also not allowed to be considered experts in our own field. They hire people to make policies that make very little sense instead, people who have never taught a day in their lives. Good system, y’all.
Here’s an analogy for you: how about if we send a bunch of people who have eaten food into all of the restaurants in America so they can make policy decisions about how those restaurants should be run? I’m predicting a lot of grease fires, some small floods, and some very sub-par pastries.
The moral of the story: just because you’ve gone to school? Yeah, means nothing. You have no idea how a school runs or, even better, how it should. That might sound harsh, but the truth hurts.
I’ll soften the blow a little bit with these Oreo fudge cookie dough bars. The bottom layer is a thick cookie dough filled with cookies and cream flair, and a simple stovetop fudge (no candy thermometer needed!) rounds out the perfect topping.
I can’t teach everyone how to fix the education system, but I can give them nice treats to make things seem better. That’s not a bad way to start a week!
Oreo Cookie Dough Fudge Bars
Ingredients
Cookie Dough
1/2 cup butter, softened to room temperature
3/4 cup firmly packed brown sugar
1 teaspoon vanilla
2 and 1/4 cups flour
14 oz. can sweetened condensed milk (I used fat-free)
8 -10 Oreos, broken into pieces
Fudge
2 cups white chocolate chips
14-oz. can sweetened condensed milk (I used fat free)
5-6 Oreos, crumbled
Instructions
- In the bowl of a stand mixer, cream the butter and brown sugar until light and fluffy. Add in the vanilla and mix again. Pour in flour and condensed milk alternately, beating until thoroughly combined.
- Add the broken Oreos and mix until thoroughly combined. Press the mixture evenly into the bottom of a foil-lined 8-inch square pan. Set aside.
- Make the fudge layer. On the stove over low heat, melt the white chocolate chips with the condensed milk, stirring constantly, until the mixture is melted and smooth.
- Remove from the heat. Pour the fudge layer over the cookie dough layer. Sprinkle the crushed Oreos on top.
- Chill for three hours. Remove the bars from the refrigerator and cut into small squares. Store in an airtight container.

I have a weak spot for all the Oreo things. Cookies and cream was my first favorite ice cream (now I like ve ALL the ice cream, typical). This looks absolutely heavenly. All my good friends are teachers so I’ve heard about how things could be better with education. My hat goes off to teachers, they’re totally under appreciated.

I am so much an Oreo girl, so we’re on the same page there. Teachers are passionate. Otherwise, we would have all been gone a long time ago!
A lot of the decisions and policies are so backwards in teaching, it really irritates me. But that’s story for another day! These bars…wow! Such perfection and SO perfect for Memorial Day, or any other day. And yay for going to the bathroom whenever you want! 🙂

My daughter is a teacher too, so I know via her exactly what you mean. So frustrating! But at least there is delectable Oreo fudge…I am forever helpless in the face of Oreos!

That’s so frustrating! Reminds me a little of how the faculty and administration don’t communicate much with each other OR the students at most universities- the big funders and board members make all these decisions, without even really consulting the people who make up the core of the school! I admire your strength as a teacher. I could never do it. I’m too stubborn and would probably get fired for “doing things my own way” instead of following the set policies. After all, the teacher is the one who knows what’s best for their students, right? This topic makes me rage-y and I’m not even a teacher. I best sit down and eat some fudge bars. Oh my goodness, I love that you go to the bathroom in the summer just because you can. Is it weird I can actually picture you hanging out in there?! 😉 The way you talk about your students, I KNOW you are a fabulous teacher. I never thought about that bathroom thing with teachers before. That’s really rough. As someone who generally has to use the bathroom every ten minutes I don’t know how I’d handle that.

Oh girl, I know what you mean about the bathroom. I very clearly remember sitting at the defense table with my legs crossed waiting for the judge to give the lawyers and the jury a break! I’m with you on the Memorial Day business to – I’m always game for throwing meat on a fire. And you are always so creative with your Oreos! These bars look sinful! Seriously? Mir, I understand your frustration – that policy making thing without doing the front line work isn’t just in schools – it’s a whole lot more prevalent than it probably should be but I’d rather talk about these sugarific, white chocolate, condensed milk and oreo bars! When I was younger, I used to put condensed milk on such a high pedestal – hat stuff is glorious – though now I have to find the lactose free versions – but am betting I could use my coconut condensed milk in this and be transported to sweet-tooth heaven!
