Mocha Toffee Mousse

Mocha Toffee Mousse

I want to marry this mousse. Sorry, Kenny.

The other day, I was really worn out. But since I’m not a coffee drinker, I did the next best thing: I gave myself a shot of this mousse. It’s not alcoholic, but it sure is caffeinated. Be still my heart. Nope, it’s beating too fast for that.

Not only is this the epitome of coffee and chocolate goodness, but there are also chocolate Heath bits through and through. Mousse has never tasted so incredible!

Reese’s Popcorn

Reese’s Popcorn

Nothing is better than tricked-out popcorn.

I used to take regular pilgrimages to NYC before the kids came along, and back then, there was a Popcorn, Indiana store in Times Square. I’d go there and order popcorn slathered in chocolate, have them pack it up in a big bag, and eat it on the train ride home.

Like all great stores, that one closed down, but I learned my lesson: always dress up your popcorn as much as you can. This one is covered in chocolate, mixed with Reese’s minis, and finished off with dollops of melted Reese’s chips. No trip to New York necessary for all of this madness!

PB Chocolate Banana Breakfast Smoothie

PB Chocolate Banana Breakfast Smoothie

Breakfast used to be such a struggle.

It all came down to the word “should.” While I crave sweet every morning, I told myself that I should be getting my nutrients. In an effort to keep the sugar down, I’d make eggs or oatmeal and hate every bite. Those foods work great for me later in the day, but I just couldn’t get down with it.

Then I discovered the protein-packed smoothie. It was like a dream come true. Not only could I have my sweet breakfast, but it would also keep me full all morning. Plus, controlling the sugar content was pretty much up to me. As soon as this revelation occurred, I began blending up my favorite flavor combinations. And really, what’s better than peanut butter, chocolate and banana in the morning?

Mocha Mousse Brownie Bites

Mocha Mousse Brownie Bites

There’s something romantic about mousse, dontcha think?

There used to be something romantic about snowstorms too, but now that I’m watching Kenny dig us out from two-plus feet of snow while my children destroy the house, I’m not really that into it. I’d much rather have clean streets and be at work, thank you very much.

The good news is, I’ve got these mocha mousse brownie bites to keep me company as the snow refuses to melt and the winds die down. These are pretty much my idea of a perfect Valentine’s dessert. These rich, fudgy brownie bites are topped with a mocha mousse and drizzled with chocolate. If you think it’s rich, you’re right! That’s how I do.

Healthy Peanut Butter Pudding (Video Too!)

Healthy Peanut Butter Pudding (Video Too!)

Apparently, some of you have made resolutions for the new year. I don’t approve, but I’ll play along.

I’ve gone on for quite a while about how I believe in healthy balance and moderation all year long, and I find January 1st to be quite arbitrary a date to start getting healthy. But hey, who am I to discourage people from being healthier? After all, I’m a fitness junkie. I do barre workouts with religious zeal and fuel up with protein afterward. And this is one of my favorite ways to do it.

Three ingredients: peanut butter, tofu and powdered sugar. Blend. Chill. I’m done! Now can we start talking about the barre again?

Loaded Caramel Apple Wedges

Loaded Caramel Apple Wedges

As usual, I wasn’t sure what to call this exactly. But I went through a few different names before settling on this one.

Last year, I tried to make loaded caramel apples. I de-waxed the apples, coated them in caramel, and covered the caramel in honey roasted peanuts and mini M & Ms. And they looked great.

But an hour later, the weight of the toppings and pulled the caramel right off the apple. So I got really angry and gave up. Until now. Because if you don’t like the rules, then change them. If a caramel apple loaded with toppings is delicious, then just do the same thing, but deconstruct it. Easy peasy! No more #caramelapplefail in your life.

Summer In Review

Summer in Review

Summer’s over. I’ve finally accepted it. But I’m not quite ready to let go.

You see, summer comes with wonderful desserts. And ice cream. Have I mentioned ice cream?

This past week, I made a fantastic poke cake. It was so delicious. And the photos were a complete #epicfail. So instead of hanging my head in shame, I’m going to share my favorites with you from this past summer!

Frozen Pumpkin Chocolate Chip Tart

Frozen Pumpkin Chocolate Chip Tart

This one is making the Thanksgiving pie cut this year.

Every year, I bake a collection of different pies for Thanksgiving. And while my mind wasn’t even on November when I did this, it doesn’t matter. This pie is going down in history as one of the big winners.

Even if you don’t use this for late autumn, it’s a perfect transitional pie. It’s got ice cream in it for warmer weather, but pumpkin for autumnal cravings. Oh, and chocolate chips for chocolate lovers with a chocolate graham cracker crust. Have I mentioned that this is the best tart ever?

Mocha Mousse Heath Bar Pie

Mocha Mousse Heath Bar Pie

Once again, I made an awesome pie that has no convenient title. Maybe pie isn’t meant to be put into a little box with words.

So instead, I’ll summarize. Ready? Oreo crust. Mocha mousse filling. Chopped Heath bar garnish.

Can we get some applause here? Maybe a reward of some kind? Actually, eating the pie is its own reward.

Coffee Granita

Coffee Granita

Confession time: I am not a coffee drinker.

Don’t hate. It’s not that coffee doesn’t taste delicious. It’s more of a personal choice. See, as the daughter of a die-hard coffee addict, I just decided to go a different way in life. Plus, I don’t like the tooth stains. They’re not too pretty.

Still, the flavor is great, and I love to bake with coffee. Or make icy summer treats with coffee. This granite is quick and easy. All it takes is two ingredients and you’re on your way to icy coffee happiness!
