Triple Threat Brookies

Triple Threat Brookies

Do you know what a Triple Threat is?

In theater (yes, I used to be a theater nerd), that term refers to someone who can sing, dance and act. They don’t just barely pull it off, either. They can do all three with amazing ease and style. We tend to hate people like that. I kid, I kid.

Consider this bar the triple threat of the cookie bar world. All other bars look at this bar and they’re jealous. You know why? Because we have three things going on here: brownie, cookie, and more cookie. Sandwiched between the layers of brownie and chocolate chip cookie is…Chips Ahoy!

Classic Peanut Butter Cookies

Classic Peanut Butter Cookies

My son doesn’t eat much of what I bake.

See, he’s a vanilla kid. He loves plain desserts, like sugar cookies. He’ll usually opt for crackers or tortilla chips instead of something sweet. He’s also as blonde and blue-eyed as the day is long, whereas I have extremely dark hair and eyes. So much for dominant genes!

One of the only desserts I make that he’ll eat are peanut butter cookies, the plain kind. No mix-ins allowed. I tried it once with peanut butter cups and he was pretty annoyed. So until he can bake, I’ll keep making the plain cookies. This recipe is pretty old school, and it works great!

Chocolate Chip Sticks

Chocolate Chip Sticks

I didn’t make this one up, but boy, do I love it.

As a baking blogger, I try to invent the majority of the recipes I share with you. After all, part of the joy is in the creation. However, there are times when somebody else’s recipe is just too good not to share, and this is one of those times.

A few weeks ago, we had lunch with friends, and their eight year-old daughter made these chocolate chip sticks. Not only were my kids impressed that someone their age baked a treat all by herself, but they also loved them. I’ve had the recipe sitting around in a cookbook called The Kosher Palette for years, but I need to make them more. These cookies are a cross between biscotti and chocolate chip cookies, and you don’t want to miss out!

Chocolate Raspberry Linzer Hamantaschen

Chocolate Raspberry Linzer Hamantaschen

Purim is on Thursday. Who knows what I’m talking about?

Every spring, the Jewish holiday of Purim occurs. It’s one of the fun ones, following the whole “they tried to kill us, they failed, let’s eat” mode of celebration. On that day, people dress in costume, deliver baskets of treats to friends, give charity, and eat hamantaschen.

This delightful cookie is named after the villain of the Purim story, Haman. These are triangular-shaped cookies that are traditionally filled with fruit or chocolate, but I’ve switched things up a bit. The dough here has a Linzer cookie twist with ground almonds, and the filling is chocolate raspberry. Talk about celebrating in style!

Pistachio Cookie Cups

Pistachio Cookie Cups

St. Patrick’s Day is Thursday, and I can guarantee you that I will forget to wear green. If anyone pinches me, you’ll get a reflexive elbow jab to the eye.

Okay, that was kind of harsh. But really, I don’t forget to wear green on purpose. I barely own anything green. I’m more of a black and gray kind of person with my clothing choices. That way, everything matches!

But with food? That’s a different story altogether. I love me some green food, and when there’s a holiday to be celebrated, that’s even better. These pistachio cookie cups are the perfect festive treat!

Thin Mint Frozen Grasshopper Pie

Thin Mint Frozen Grasshopper Pie

Happy Pi Day!!

That’s right, kids. Monday, March 14th is the happiest of all national holidays, the day Americans celebrate what is truly important in life: PIE!

My school is having a pie extravaganza today, and this baby here is my contribution to the effort. Somebody stop me before I eat it all up. On the other hand…nah, don’t. Let me do some damage here. We’ve got an Oreo crust, mint chocolate chip ice cream, and crushed Thin Mints. It’s the easiest pie ever, and might be the most delicious.

Tagalong Peanut Butter Blondies

Tagalong Peanut Butter Blondies

Everyone already ate the Tagalongs. They’re gone. Cue my sad face.

Luckily, I baked a bunch into these peanut butter blondies before they were totally gone, so we got to enjoy them in a different form. Oh, the love.

Known as Peanut Butter Patties in other parts of America, Tagalongs are my number one favorite Girl Scout cookie. Who can argue with peanut butter and a cookie drenched in chocolate? Stick all that into a dessert bar and we’re just talking pure joy.

Easy Sugar Cookies

Easy Sugar Cookies

My grandmother made really good sugar cookies.

Yeah, yeah, everyone’s grandmother probably did. But the thing is, sugar cookies have never been my favorite. I could take them or leave them. But hers? No way. I ate them all up every time she baked them.

Sugar cookies are my son’s favorite, but I used to avoid making them because I didn’t like the work involved with either rolling out dough or making a log and slicing off cookies. But this recipe is simplicity itself. My son can get his cookies, and I can spend more time playing Connect Four with him instead of rolling out cookies.

Peanut Butter Cookie Heart Cake

Peanut Butter Cookie Heart Cake

What’s better than a cake? A cookie cake. What makes a cookie cake even better? Baking it in a heart-shaped pan, of course!

If I had to decide what to bake somebody on Valentine’s Day, which I don’t (see below), I’d definitely go for cookie cake. It’s easy and fast, but it just oozes love and chewy delight.

This year for Valentine’s Day, Kenny is getting chocolate and a book. I’ve done enough baking leading up to this heart-shaped day, and we need no more. You feel me? #foodbloggerproblems

Valentine’s Day Dipped Oreos

Valentine’s Day Dipped Oreos

Not much is more annoying than spending a ton of money on something you could have made on your own for cheap.

There’s the convenience factor, sure. Paying someone to make dessert is a lot easier than rolling up your sleeves and doing it on your own, but on Valentine’s Day, we like to pull out all the stops and make the treats ourselves. So why pay a lot of money to an expensive chocolate shop for dipped Oreos?

These are just as good as the ones you pay for, if not better. See, they’re made with Double Stuf Oreos, which have more filling. They’re also blinged out for Valentine’s Day. There’s a video tutorial below, so enjoy!
