Pumpkin Spice Cookie Cake

It’s autumn, which means that there are a series of holidays that force me to go digital-free for a couple of days this week and next. So I’ll be back on the scene soon, but in the meantime, I have this for you!

It’s a pumpkin cookie cake, yep. But it also has delightful pumpkin spice cream cheese frosting. It doesn’t get much better than this. Unless somebody happens to have a jet ski handy, because that’s on my bucket list.

Cookie cakes are so superior to plain old cookies. Think about it: no dough chilling time, nice big wedges to dig into, and frosting. Why do you think those cookie cakes at the grocery store always look so tempting?

Summer’s over. I’ve finally accepted it. But I’m not quite ready to let go.

You see, summer comes with wonderful desserts. And ice cream. Have I mentioned ice cream?

This past week, I made a fantastic poke cake. It was so delicious. And the photos were a complete #epicfail. So instead of hanging my head in shame, I’m going to share my favorites with you from this past summer!

Peanut Butter Cookie Cup Minis

If you don’t like Reese’s peanut butter cups, we might be perfect for one another. Because I will totally eat all of yours.

That’s right. You can have all of my Andes mints or Krackel bars. Those don’t rank so high with me. But if you try to get into my Reese’s supply, we’ll probably have words. Heated ones.

These cookies are classic and indisputably a winner. Who could argue with a peanut butter cookie wrapped around a peanut butter cup and baked into a mini muffin tin?

I’m in a cookbook kind of mood this week. Enter Martha Stewart.

For the record, I find Martha as intimidating as most women like me do. You know, the women who can’t tie ribbons or decoupage their way out of a perfectly wrapped present. In fact, I’m not even sure what decoupage is. We had an intern once who was really into it, though.

Intimidating or not, I love Martha’s cookbooks. Her baking book on cookies is a constant goldmine. This is a recipe from her book, except I made some changes. That’s just my way!

Chocolate Chip Pecan Cookie Bars

Have you ever met anyone who doesn’t love a chocolate chip cookie?

If you have, you can inform them that they are missing a soul. I’m sorry, I know taste is subjective. But I mean, come on. It’s a chocolate chip cookie!

When you’re feeling lazy, make bars instead. These chocolate chip bars are also full of chopped pecans and topped off with chocolate drizzle. The flair on top is optional, but I love me some drizzle.

Butterscotch Peanut Butter Cookie Dough Truffles

Oh, how I love a truffle. And cookie dough. And together…wham! Wait, is that Emeril’s line? Or is that “bam!” I always get confused.

Wham, bam, thank you…egg-free peanut butter cookie dough. Filled with peanut butter and butterscotch chips. Covered in chocolate with peanut butter drizzle. Because boy, do you make life that much better.

To be honest, I need a little more chocolate therapy than usual this week. My body is sore thanks to a tubing incident, and I need to dull the pain, doctor.

The Best Vegan, Gluten-Free PB Cookies

I’ve got to post something kind of healthy. It’s been candy bars and cola all week long. Consider this recipe equally delicious, but a little less crazy than black cherry cola cake and Baby Ruth brookies.

Of course, it’s a peanut butter recipe. I have a rule when it comes to gluten-free baking: chocolate or peanut butter (or both) has to make an appearance. I don’t know about you, but I still haven’t mastered the GF yellow cake. It’s on my baking bucket list, but as yet, no progress. I’ll keep working on it.

Chocolate and peanut butter are both strong flavors, and they work well with my favorite of all gluten-free flours: oat flour. It has to be certified GF, by the way. Just remember that. I wouldn’t put oat flour in more delicately-flavored desserts, but in peanut butter cookies? Fo sho. For an added bonus, these puppies just happen to be vegan. Eat that, all y’all!

Pink Lemonade Snowballs

Have we talked much about my favorite cookie? Probably not, especially in the summertime. Who bakes snowball cookies in the summer?

Well, I do. This pink lemonade version has taken my favorite winter cookie and morphed it right into summer where it belongs. It’s pink and cute and ridiculously tasty. Those are all fantastic reasons to eat a cookie!

Another reason to eat a pink lemonade cookie? Lemon is a summer flavor. In fact, as you’re reading this, I’m at the beach with my buddy getting some girl time. And you can bet your patootie that we’ll be getting some fresh-squeezed lemonade on the boardwalk!

Breakfast is calling. It’s wondering why cookie chips took so long to get into coffee cake.

Cinnamon is one of those dark horses. I forget about it for weeks, sometimes months, at a time. And then without warning, I eat a dessert with cinnamon, and wham! I can’t stop.

When I tried Hannah Max cinnamon sugar cookie chips for the first time to decide how to bake with them, I had to slap my own hand to stop it from reaching back into the bag. The cinnamon sugar flavor is more addictive than I expected. It’s always fun when life runs contrary to expectation in a good way!

Patriotic Peanut M & M Cookie Cake

Sometimes I just need to bake cute, ya know?

Whenever I see a gorgeous woman, I might feel a twinge of envy. Okay, more than a twinge. But then I remember that being cute has a much longer shelf life than being pretty. Or at least, I hope it does.

Besides, people like cuteness everywhere. I saw a chocolate-covered Oreo shaped like a flower last week and I just had to have it. I mean, I always want a chocolate-covered Oreo, but when you put it into a flower chocolate mold that looks like a daisy, hot damn. That’s one adorable treat. So I figure I should bake cute whenever I can.
