Well, the week marches on. Today was Primary Election day in my state, and I watched a lot of people agonize over which terrible candidate to vote for. Yay for democracy!

Ideally, the voting process should be nothing but exciting, but it’s harder this year than usual. Looking toward November is a worrisome occupation, at least for me. I want to believe that everything will turn out okay, but I’m in a negative frame of mind these days.

Whenever I feel overwhelmed, I bake. There’s a mindful mindlessness about baking that lets my brain fall away a bit as I make ganache or press tart dough into a pan. The motions are repetitive, soothing, and exactly what I need sometimes. When the result is this mind-blowing linzer tart smothered in ganache and almonds, I can banish all the negativity and just think about the rich flavors exploding in my mouth.

Hold on to your hats, almond butter lovers. You are about to be seriously happy.

When almond butter first became a thing, I got really excited and ran out to buy some. And then, boom. Huge disappointment. It wasn’t bad, but it wasn’t peanut butter.

I think that was my problem. I was looking at almond butter through the lens of peanut butter and expecting something just like that. When I learned to step back and appreciate almond butter on its own, then it was so much more delicious. Plus, then I could open up all the baking doors and make those fun desserts happen!

Breakfast used to be such a struggle.

It all came down to the word “should.” While I crave sweet every morning, I told myself that I should be getting my nutrients. In an effort to keep the sugar down, I’d make eggs or oatmeal and hate every bite. Those foods work great for me later in the day, but I just couldn’t get down with it.

Then I discovered the protein-packed smoothie. It was like a dream come true. Not only could I have my sweet breakfast, but it would also keep me full all morning. Plus, controlling the sugar content was pretty much up to me. As soon as this revelation occurred, I began blending up my favorite flavor combinations. And really, what’s better than peanut butter, chocolate and banana in the morning?

I’ve gone on for quite a while about how I believe in healthy balance and moderation all year long, and I find January 1st to be quite arbitrary a date to start getting healthy. But hey, who am I to discourage people from being healthier? After all, I’m a fitness junkie. I do barre workouts with religious zeal and fuel up with protein afterward. And this is one of my favorite ways to do it.

This crust, fellow dessert lovers, is the one. While traditional key lime pie has graham cracker crust, this one is made of ground almonds and white chocolate. Do you want to guess which crust is better?

If you guessed graham cracker, you are just plain wrong. This pie crust is just beyond all my wildest expectations and dreams. It’s such a perfect base for tart, creamy key lime filling. That’s what I get for thinking creatively!
