Do you ever spend money on something you could do perfectly well yourself, if not for a certain lack of time and/or abundance of laziness?

Like scrubbing the toilet. I don’t like to do that. Not because I think I’m above it (I clean up my kids’ vomit, so I’m not above anything), but because I do a horrible job. It’s just not my area of expertise. Likewise, I avoid setting off bug bombs. Exterminators are my friends.

Whenever I go to the mall, I always see the Godiva sign hanging like a beacon in the distance, beckoning me toward its glory. And sometimes I will stop in and buy some chocolate, especially the truffles. If you haven’t tried their red velvet truffle, just do it now.

But sometimes I want to make my own. It’s cheaper, pretty easy, and I can get creative. The hardest part about making a truffle is really just deciding to buckle down and do it.

Remember when dessert used to be a simple affair? A brownie. A cookie. A piece of chocolate fudge, plain.

Well, folks, them days are over. And thank heaven they are, because dessert is being pushed farther than ever before, all because of food blogging. How can anyone possibly object? We’re baking as fast as genius food manufacturers are developing newer products.

Like Nestlé’s pumpkin spice-flavored morsels. I saw them at Target and bought 4 bags. I had to play with them! And the first recipe they yielded is this caramelized pecan and pumpkin spice fudge.

My son just had his half-birthday. I don’t know how many of you do that, but kids seem to love it. Hey, any excuse to get a special treat one more day out of the year!

I may have mentioned before that my son doesn’t like chocolate. So whenever it comes time to bake for him, life gets complicated. Because you know, he’s picky. He’s not fond of caramel either, or certain textures really get to him. But candy? Candy is always okay. And candy corn is even better! And when baked into a cookie?

Yep. Happiness!

Those evil geniuses over at Nabisco just won’t quit. What is up with that? Every five seconds they’re releasing a new flavor. Pumpkin Spice is debuting September 24th. I never knew a cookie could have a debut. Heck, I never had one.

But with strange marketing savvy born of years creating a totally addictive product, Nabisco is constantly entrapping me. Latest example: Caramel Apple Oreos. I had to give them a shot. How could I not? Caramel apples are one of my favorite fall treats!

Do you ever feel like you’ve been hit with a Nyquil stick?

As in, your limbs just get heavier. You’re exhausted. You think about people who sleep later in the morning and you feel nothing but intense envy.

It’s the beginning of the school year. I’ll adjust. In the meantime, when I finally drop into bed, I’m sleeping very well. And I’m also rediscovering the joy of candy to keep me going during those conscious hours!

Welcome back to Beach Week on Just About Baked! I’m celebrating the best of boardwalk treats with my own twists!

Have I mentioned that I didn’t grow up anywhere near the water? The closest we came was a three-hour drive to Lake Michigan. It was really beautiful, but I’m more of an ocean beach girl. Something about those crashing waves really gets me every time.

Today is fudge day. One of my priority stops in any beach town is the candy shop, which is usually stocked with thick slabs of fudge in different flavors. They usually have great deals, too, because fudge doesn’t last too long and they need to sell it. It’s a win for everybody!

It’s Beach Week! This week, I’ll be making beach-themed treats in honor of my adopted east coast culture.

You see, out here, people spend weeks or even the entire summer at the beach with family and friends. I first did that ten years ago and it was a banner time. My friend told me to consider dating the man who is now my husband. And the rest is really and truly my history!

This post is for a guy I work with. I’ve known him since I was a student teacher 14 years ago, back when we were both super young and perky. Now we’re old and crochety.

He just had a birthday and he loves Oreos. I see him turn down dessert a lot, which I know because I’m usually the one offering it to him. You see, he’s “trying to be good.” Have I mentioned how much I hate stigmatizing food as good or bad? Ugh. It’s food.

But anything with Oreos and this guy cannot resist. It’s like me with peanut butter cups. We all have that Achilles heel. Own it!

Nutella Cookie Dough Truffles

Okay, I admit it. You dragged it out of me. It’s time to come clean.

The truth is, I’ve been known to hoard…truffles.

Oh, I’m so ashamed. You see, I love throwing things away. I know it sounds wasteful, but it makes me feel like I’m finally getting organized and cleaning up the constant mess that my kids throw around the house each second they’re home. I don’t save anything except the rare, unquestionably special school project.
