Lemon Pie Crumb Bars

If you’ve ever heard the expression “easy as pie,” you know that it was coined by someone who eats pie, not someone who makes it. Pie is not crazy difficult to make, but if I had to make up an expression about something being easy, I would not pick pie. Maybe “easy as microwave popcorn?” Nah. That’s hard. I burn it a lot.

Besides, if you’re going for ease, you should probably pick a finger food. Pie is easy to eat if you have plates and forks, but I cannot tell you how often someone brings a pie into the office and there are no implements with which to consume said pie. When given the choice, I turn my pie into bars. And when given further choice, I make lemon pie bars. With endless crumbs on top!

Snow season is here.

As I write this, my school system is on a 2-hour delay and I’m sitting in a very quiet office with a cup of tea at my side and a blanket wrapped around me. Oh, the things I do when students aren’t here. It’s beautiful.

What’s not so beautiful is waking up at the crack of dawn, driving to work on time because you want to beat the awful snow traffic, and then realizing that they haven’t salted or sanded. Oh, the joy of sliding into work along with your other early bird commuters. It’s not okay. And it’s so cold and dark outside.

Folks, I just threw a heckuva party.

Adam Sandler wasn’t kidding when he called Chanukah “eight crazy nights.” And last night, I had all of our relatives (and believe me, there are a ton of them) over for our annual family party. And it was so much fun. But I think I’m going to be recovering for at least a week.

For one thing, children were literally pouring out of every floorboard in my house. When did I get so lucky? I have my own brood, and then some super-delightful nieces and nephews, cousins…they’re everywhere. And all but one range in age between 7 and 2. At one point, I actually saw a latke plastered to the ceiling. Kids in college don’t get this wild.
