This one is for all you Rosh Hashanah people out there. You know, the Jewish New Year? It’s going on as we speak. And what better to celebrate than a traditional honey cake?

Except, well, they’re often not so great. Honey cakes can be dry, sort of like pumpkin cake’s less sexy counterpart. Why make a honey cake when there’s pumpkin around?

I’ll tell you why. This cake. This amazing, tricked-out, not dry but super moist honey cake!

No, you didn’t read that wrong. I realize it’s not that time of year. You know, the magical days when little girls (or more likely, their parents) start collecting cookie orders for Girl Scouts. Nope, if it were that time of year, the weather would be getting warmer instead of colder and I’d be a lot happier.

So what do you do when your buddy has a birthday in September and her favorite cookies are Samoas? And there are no Samoas to be had?

Well, make one, of course. A giant one. In a cookie cake!

When I was in college, our dining hall would bring in brownies every Friday night. These were no ordinary brownies. They were covered in a layer of ultra thick, fudgy frosting. The brownies themselves were nothing special, but man, that frosting? Worth every bite.

And boy, did I eat a lot of them. I’d hover near the kitchen, waiting for them to bring out the brownies. And in later years, I experienced that same frosting on cakes because I tracked down the bakery and bought a lot from them. Until they shut down. Cue dramatic sad music!

I love the idea of a cookie jar. Growing up, that wasn’t something we had in our house. We had plenty of dessert options, mind you. Just not an actual jar with cookies inside. As a result, it’s always been sort of a dream for me to have a cookie jar.

Except, well, they’re often ugly. And breakable. And most aren’t airtight, so the cookies go bad faster. And when kids get home from school (or their exhausted teacher mom), a cookie isn’t necessarily the answer. Sometimes you want cake. Amazing snack cake. No, not Little Debbie’s (though I do miss those hydrogenated suckers). Healthy, delicious, homemade pumpkin snack cake.

I need to stop complaining. Because even though it’s been an exhausting first week back at teaching, I do love my job enormously. My students are so nice! They thank me for teaching them when they leave the classroom, and honestly, that’s just cool. I have to tell their parents how amazing their kids are on Back to School Night!

To celebrate getting through week one, I had to make a cookie cake. A butterscotch one. Because I’ve been neglecting that particular flavor lately, and that just isn’t right. What isn’t awesome about butterscotch?

I hate epic fails.

Yep, my caramel apples, so lovingly planned to go up today for the first day at school, tanked. See, I had this massive migraine yesterday and I tried (smarty that I am) to make caramel apples while lights were flashing in my field of vision and my head was pounding.

So, yeah. Caramel apples for another day! Something to look forward to, right?

In the meantime, there’s this cake. I love this cake. It’s vegan and gluten-free, but it’s so incredibly delicious. Sounds wrong, I know, but it’s true!

My birthday cake is kind of a problem every year. You see, I am the family cake baker. So when it comes time for someone to provide a cake for me, there’s usually a debacle of some kind.

This year was no different. My husband tried really hard to get my favorite Baskin Robbins cake, but they now have some non-functioning system where you can only order a cake online, except it doesn’t work. He tried everything. Calling, going in, ordering online. Nobody would let him get a friggin’ cake. So I wound up baking my own. But that’s okay, because then I know it’s perfect!

Chocolate Peanut Butter Cake

Why are Sundays so exhausting? Seriously. I’ve never liked Sunday. At best, it feels like a last gasp of freedom all day, and it’s also consumed by errands or playdates or birthday parties or other activities that make my feet hurt.

If Friday is the best day (which I believe it is, since anticipation is the key to all pleasure), Sunday is the worst for the same reason. So I try to have a nice Sunday treat to look forward to, or even a few. My husband and I do date night on Sundays because even though we’re too tired to go out, we get a second wind (or a fifteenth?), and I love that. And it’s always great to have a food treat around, too!

I’m starting to feel it. The sense of looming dread begins as August begins and summer starts its slow descent toward autumn. Sorry about the gloom, everyone. But as much as I love summer, I hate how short it is! Shakespeare wrote that “Summer’s lease hath all too short a date.” Duh, Will. Tell me something I don’t know, okay?

Someday I’m going to live in a warm climate. Someday.

But for now, I just have to do things to keep myself from getting all maudlin. Enter these whoopie pies!

They say the darkest hour is just before dawn.

With all due respect, that’s a pile of $#!*. Just not true at all, I’m afraid. The darkest hour is 9:30 PM when your kids have gone to bed and you wanted to watch episodes of Cake Boss but you can’t because you’re in piping hell. The cake isn’t looking right, melted frosting is leaking out of the wrong side of the piping bag into your hair, and you feel nothing but deep despair.

Or does that just happen to me?
