We’re here. Gingerbread season. Let’s do it up right!

I’ll be honest with you: I have very mixed feelings about the holidays. They seem to be an elaborate ruse to guide us toward winter with enthusiasm, where we’re left in January with bare trees, chilly mornings and frozen windshields. But on the other hand, those lights sure are pretty.

While I don’t celebrate Christmas, I can get down with gingerbread anything. That includes these gingerbread cookie cheesecake bars, which are both easy and festive. They’re also studded with cinnamon chips, one of my favorite baking inventions.

One last pumpkin recipe, something to wake you up on this lovely day after Thanksgiving. Got room for a little more?

I’ll keep this post short and sweet, since we’re all still recovering from Thanksgiving overload. Every year, my brothers make huge leftover sandwiches at night and chase them down with martinis, and the next day, they make pumpkin waffles for breakfast. I just cannot. I have a limit.

So while everyone is still doing it up with turkey, I’m giving pumpkin her swan song of the season. These brownies are pretty special!

Oh, lord. Here I go with the cheesecake again.

I mean, it’s pretty much impossible not to love cheesecake, so why not one more push for pumpkin? Or wait…I might have yet another post in the pipeline with that lovely form of orange squash. Can you take one more after this?

Either way, this one is quite a literal winner. I entered these bars in a D.C. top chef-style contest a few years ago, and they cleaned up. I won not only the dessert category, but also the overall grand prize. So believe me, you want to make these.

It’s my 10th anniversary, friends. Today is quite a special day. Too bad I’m at work, teaching America’s future!

This post is not just about this dessert, which I made in honor of love that lasts. It’s about, well, the love that lasts.

Almond Marzipan Cookie Bars

Marzipan is one of those love-it-or-hate-it treats. I’m really hoping that most of you love it, since it’s one of my favorite things in all the world.

If you catch a whiff of almond extract and you want to drink the bottle, then you love marzipan. If not, well, yep. Sorry. You can come back next week when I have some fun spooky treats set to go!

These are buttery cookie bars topped with a gooey layer of baked marzipan and toasted almonds. I’ve had to hide these in a dark corner of the freezer to avoid consuming every last one.

Everyone loves cheesecake. Everyone loves chocolate chip cookies. Let’s make them a duo like peanut butter and chocolate. You dig?

Seriously, when you love something, you don’t set it free. You keep it in your life and obsess over it. I’ve never been able to turn down cheesecake, especially if it’s packed with milk chocolate chips. I’ve never been able to turn down a chocolate chip cookie, unless something is majorly wrong in my life.

Putting them together just equals total happiness. If anyone wants to be unhappy, stop reading.

Butterscotch Cookie Bars

I have a lovely autumn offering for you today. In case you’ve forgotten, butterscotch is an awesome fall flavor. Just imagine eating these cookie bars by a fire pit while the leaves crunch underfoot.

Or, you know, hidden in a closet from your kids. Whichever image suits you best.

I can’t think of a happier way to highlight the superiority of butterscotch than these thick cookie bars. They’re chock-full of butterscotch chips and topped off with even more of the stuff. Say hello to my new favorite bar cookie!

Candy Corn PB Pumpkin Spice Crumble Bars

Yep, I know. That title is a mouthful. But so are these bars, and I honestly had no idea what to call them. But like anything that it indescribably good, these are a keeper.

If you’ve ever taken a crumb cake and eaten the top off, these bars are for you. Made with pumpkin spice peanut butter (thank you, Jif!), these are so light that they crumble at the slightest touch. It might not make for the neatest edges, but these guys make quite the party in your mouth.

And of course, I had to add in candy corn. Who doesn’t love candy corn? As my friend Dorothy points out, when peanut butter and candy corn are put together, they taste like a Payday bar. And with that pumpkin spice twist, the hint of cinnamon is just…yep. Major win here, guys.

Ya know, Butterfingers have never appeared on this blog. Why? Why?

So hard to answer a question for which there’s no good answer. The reason is, of course, because I just never got around to it. And now that I have, I’m embarrassed at how long it took.

I mean, it’s a Butterfinger. They’re so happy. Why would anyone ever leave them out on purpose? Especially when they can go into brownie bites? And I’m not talking about those mediocre brownie bites you buy at Costco in the container. Nuh-uh. These blow those sad little stand-ins for a baked good out of the water, and then some.
