Aw yeah. I went there.

Full confession: until a few years ago, I turned my nose up at all coconut desserts. All of them. And then one day, the angels spoke to me and I ate an Almond Joy. Boy, did I feel like an idiot. It was delicious.

Since then, I’ve come to realize how much a heap of coconut on top of a dessert can change the game. And when that heap of coconut happens to be couched in easy, gooey German chocolate frosting, so much the better.

Years ago, I tried Ben and Jerry’s Cheesecake Brownie flavor. And it was such a great flavor. After all, what could be better than cheesecake ice cream with brownie chunks? I asked myself that very question while I made this ice cream.

Every now and then, you run across something unusual in a torn out recipe at the bottom of a drawer that seems so nutty it might actually work.

This recipe is one of those finds. Four ingredients, guys. Four. In other words, any novice or reluctant or lazy baker can tackle this one!

If you have a can of sweetened condensed milk, a box of graham cracker crumbs, some baking powder and chocolate chips, pay attention. This recipe might be for you! But only if you like those ingredients. Me? I happen to love them.

If you’ve been following Just About Baked for any length of time, you know that I love the food. All the food. And the food products. My life is one happy trip to the grocery store to find new things.

A couple of years back, I was in the bakery section of my local Safeway (not an unusual place to find me) when I spotted Hannah Max Cookie Chips on the shelf. They had several flavors, and I picked up the chocolate chip, not knowing what to expect.

What I got was a crispy cookie that tasted absolutely homemade. And they were so good that Kenny (these were the days prior to his gluten-free lifestyle) ate the entire bag. And when I bought more, I was wise enough to hide them.

German Chocolate Cake

My dad just had a birthday, so I made his favorite: German chocolate cake. And like the dutiful daughter I am, I didn’t work crazy hard on it because my dad told me not to. My parents are always telling me to take it easier.

While I was baking this cake, I realized that I don’t talk about my dad much on this blog, which is odd. My parents are a huge part of my life. We live close to one another, so I see them almost daily. And my dad explains a lot about who I am.

Yes, I realize I’ve been posting a lot of Girl Scout cookie recipes. No, I am not done. Deal with it.

Boy, did that come out rude, especially to my (very valued) readers who are not American and have no idea what this stupid Girl Scout cookie craze is about, anyway. I do apologize. And I can always suggest substitutes if you can’t get the cookies. But you have to understand something.

Girl Scout cookies are America, people. And I’m an American food blogger. If I were a French food blogger, I’d be doing a lot more with delicate pastry dough and awesome macarons.

When in doubt, always follow behavior patterns that have proven successful in the past.

Example: when I’m not sure what to bake, the answer is magic bars, pure and simple. Because no matter how basic a magic bar is, different flavors and combinations abound. And when there are Girl Scout cookies in the world, attention must be paid.

This is my one-year blogiversary, everyone. You’d think I’d be celebrating by popping champagne and downing one of my decadent desserts, and perhaps that will happen, too. At the moment, though, I’m feeling more contemplative than celebratory.

Meyer Lemon Pie Bars

This time of year, I need a little pick-me-up on a fairly regular basis. Whether it’s eating a truffle while I stare out at a snowy landscape, reading under a fuzzy blanket, or cuddling with any child of mine who is willing to let me squeeze them for a few minutes, it’s super important to relish the hibernating aspect of winter.

Every now and then, I also like to bake a summery dessert to raise the brightness in the kitchen. Nothing is more summery to me than citrus, especially anything yellow. So these Meyer lemon pie bars are perfect for cheering up the landscape!

I had no idea what to call these. But they’re awesome.

Let me backtrack. After a week of the flu and another week recovering from the flu, I’m still waiting for my appetite and taste buds to return to normal. The flu is evil in so many ways, but I never expected it to alter my eating this dramatically.

Pretty much, I’ve wanted two things since the fever broke: sushi and truffles. When the fever was raging, all I wanted was Coke Slurpees. So basically, any healthy eating habits have gone right out the window.
