I’ve realized something about pesky gluten.

You notice it’s not there when the flavor in something isn’t strong enough. Like in a yellow cake, it’s pretty easy to detect an absence of gluten. But in a peanut butter-based dessert or anything with chocolate, it’s much harder. Which is why I’m pretty decent at gluten-free baking. Take my husband, for instance. I knew him for 7 years before we even thought about dating. I mean, it’s not like I never noticed him. He was super adorable. How could I not? I like to keep my chocolate in the freezer. Have you tried it? If not, I highly recommend. The whole consistency and texture and flavor just changes in this magical way when chocolate is frozen.

What eventually happens is that the front drawer in my freezer is full of goodies: M & Ms, chocolate chips, butterscotch chips, peanut butter chips. If it’s got chocolate, it’s in there! So every now and then I have to get rid of whatever is in there and then replenish gradually. It’s the circle of life.

When I was in college, our dining hall would bring in brownies every Friday night. These were no ordinary brownies. They were covered in a layer of ultra thick, fudgy frosting. The brownies themselves were nothing special, but man, that frosting? Worth every bite.

And boy, did I eat a lot of them. I’d hover near the kitchen, waiting for them to bring out the brownies. And in later years, I experienced that same frosting on cakes because I tracked down the bakery and bought a lot from them. Until they shut down. Cue dramatic sad music!

I’m not really sure how to classify this dessert. My grandmother, who taught me how to make it, called it a cake. In fact, she made it for my grandfather’s birthday every year. But darn it, whenever I make it, I just see a pie. So we’ll go with that. Sorry, Grandma.
