Summer is fudge season! Didn’t you know?

Well, you might not realize that if you don’t live near an east coast beach town. For those of us who are in the know about boardwalk treats, we get the joy of candy shops with thick slabs of fudge for sale everywhere. It can’t be beat!

I’m not due to hit the beach for another month or so, and I could just throw up my hands in despair and decide to wait. Or I could make this rocky road fudge, which takes about five minutes to put together and tastes oh so beachy!

For her birthday a few weeks ago, we gave my daughter a doll and a tricked-out stroller. She really wanted an American Girl doll, but I mean, come on. They’re a hundred bucks a pop, and that’s before clothes and accessories. Plus, she’s a child. Can she really take care of a hundred dollars’ worth of anything? We had doubts.

I’m glad we got her the cheaper doll, since she’s been dragging it around by its hair or swinging it by its arms. I feel really badly for the poor doll. She’s probably wondering why she had the rotten luck of being adopted by this crazy family.

The other day, my mother brought over the doll cradle that I used when I was growing up, and I was actually surprised to see that it was in pretty good condition. But then I got to thinking about it, and I took pretty good care of my toys. I was never neat, and I was certainly no angel of a child. But somehow, the toys stayed nice.

With my kids, it’s a totally different story. They’re not precisely destructive, but they’re not good at understanding how caring for something lengthens shelf life. So in yet another episode of Mir’s Mom Guilt, I ask you: how to create learning opportunities for them? Short of confiscating all their toys, that is?

I’d like to see somebody try and confiscate anything of mine. I’d be pretty fierce. Especially if they were trying to take away dessert. Not happening!

Whenever I’m in a hurry, I make fudge. Seriously. The whole thing takes less than five minutes, thanks to our good friend, Mr. Microwave. And after the requisite chill time, it’s time to dig in!

This fudge is loaded with mini-marshmallows, walnuts and lots of chocolatey goodness. Your inner rocky road fanatic will be quite pleased!

If you can’t get to a beach town this summer, here’s the next best thing. Give it a shot!

 

Rocky Road Fudge

Ingredients

1 bag milk chocolate chips
14-oz. can sweetened condensed milk (I used fat free)
1 cup mini marshmallows
1 cup roasted walnuts

Instructions

  1. Line an 8-inch square pan with waxed or parchment paper. Set aside.
  2. Pour the milk chocolate chips and condensed milk into a microwave-safe bowl. Heat for two minutes and stir. If needed, heat for another 30 seconds and stir until smooth.
  3. Mix in the mini marshmallows and walnuts. Pour the mixture into the prepared pan and pat down evenly with a spatula.
  4. Chill for three hours until set.
  5. Cut into squares with a sharp knife. Store in an airtight container.

    I hear you on the American Girl doll thing. . but my kids have one. . I was thinking about just getting one to share but that wouldn’t work. . anyway, my oldest is like you. . keeps her toys and dolls in good condition, takes care of them etc. . my youngest, no way. I love that your mother kept your old doll cradle!!! WOW! I have no idea where my old toys are. . any of them. . my mom probably tossed everything . . LOVE this fudge and I can’t believe these can be make in only 5 minutes!!!! Hooray!

      The whole sharing thing definitely doesn’t work. I was dumb enough to buy both my daughters one doll house to share. ANARCHY. Never again!

    I was always pretty particular with my toys and kept them in good shape. Ahh, the good ol’ days of Cabbage Patch Kids (when they first came out) and Barbie Dolls 🙂 This fudge looks incredibly delicious and love how easy it is to put together. I think just about any time is the perfect time for fudge 🙂

    I’m like you, all my dolls from my childhood are in a great condition! But these American Girl ones, they look awesome, but looking at the price??? And then you will need to get all the accessories and clothes! This fudge looks amazing! Any time of the year is great for fudge!

    Mir, when my parents moved over to the US about 10 years ago, my mom brought over some of the toys I used to play with – I don’t remember being good with my toys, so I think it was more my mom taking care of them after I tossed them aside that preserved them. I wish I had a good suggestion for you, but, all I did when my daughter was young and would throw her stuff aroundw as to confiscate it – but different strokes, different folks right?
    BTW, I need to move to a beach town – or next door to you because this fudge looks insanely good! I’ve never had fudge with marshmallows in it – wow!

      The thing is, she doesn’t mean to be careless. So confiscating toys just seems cruel. She really does forget how to handle them, and she cries when I remind her. So it’s a tough thing!

    Happy belated birthday to your daughter! American girl dolls!! OMG, I had a bunch of those.. but they didn’t cost an arm and a leg back then. And I was one of those weirdos who took REALLY good care of toys. Like, everything had a proper place on a shelf or the dolls had their own box I would store them in when I was done playing. Yeeaaa, I was a freak. 😉 Anyways, I don’t recommend confiscating things ever… never goes well. At least if you were taking my stuff I’d probably bite your arm. hahaha. ANYWAYS, TMI. FUDGE! I had no clue fudge was a summer beach thing… but then again I don’t live at the beach. So thanks for the 411, Mir! This fudge looks amazing!     One of the most amusing things about fudge and taffy to me is that every coastal town seems to claim that they invented them. Not the case (in most cases at least, I suppose!) but I love how both seem to proliferate in coastal towns. Being from the jersey shore, I have a particular fondness for both. Love this recipe! The texture looks just perfect.
