Double Chocolate Chip Bars

Nosebleeds can really interfere with your dignity.

I was teaching yesterday when all of my students started giving me this funny look. It took me a second longer to realize that blood was freely gushing out of my nose (I’m a very enthusiastic bleeder). Like the cool teacher I am, I grabbed the tissues and kept on talking about Nick and Gatsby and Daisy. But honestly, with literal blood on my hands, I don’t think I recovered very well. There went that class. I’ll do better next time.

Double Chocolate Chip Bars

Honestly, I have very little dignity left. I fall down a lot, sometimes when I’m not even walking. I’ve collapsed in front of students for no other reason than a wobbly knee. And I’ve had wardrobe malfunctions while teaching. Embarrassing ones, believe you me.

Double Chocolate Chip Bars

A long time ago, I just figured that if I was going to fail so spectacularly and so publicly, I might as well go for broke in all areas of my life. Which explains my extreme dessert philosophy, of course. Why decide between brownies or cookies when you can have brookies? Chocolate chip ones, to be exact?

I didn’t call these brookies, even though that’s what they are. We’ve got a layer of fudgy brownies, full of chocolate chips, and a layer of chocolate chip cookie dough. Simple. Classic. Gone.

Double Chocolate Chip Bars

Yep, people like classic sometimes. Turns out nothing is quite so irresistible as a brownie or a chocolate chip cookie. Put them together and people’s faces light up. I like seeing lit up faces. Makes my heart all warm and gooey like a chocolate chip in the oven.

Double Chocolate Chip Bars

That’s it for fun similes, but I’m not quite done with my musings on dignity. Somewhere along the line, we develop both inhibitions and restraint, and with that comes the fear of looking stupid. Well, guess what? You’re going to look stupid at some point, so you might as well embrace your humanity and get over yourself.

Come to think of it, I hope my students get over the sight of me, bloodied but unbowed, trying to continue class while pinching at my nose with a school-issued flimsy tissue. I certainly have. And I intend to fill the time eating brownies, not being embarrassed. Or if I’m really lucky? Brookies!

Double Chocolate Chip Bars

Ingredients

Brownies
1/2 cup butter, melted
1/2 cup cocoa
1 cup sugar
2 eggs
2 teaspoons vanilla
1/2 teaspoon salt
1/2 cup flour
1/2 cup chocolate chips
Cookie Layer
1 cup plus 2 tablespoons flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, softened
1/4 cup granulated sugar
1/2 cup packed brown sugar
1/2 teaspoon vanilla extract
1 egg
1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350. Line an 8 X 8 pan with foil and spray it with cooking spray. Set aside.
  2. In a medium-sized bowl, mix the cocoa into the melted butter until it dissolves. Add the sugar and stir again. When the sugar is incorporated, mix in the vanilla and eggs. Add the salt and flour, mixing until just combined. Fold in the chocolate chips.
  3. Spread the brownie batter in the prepared pan and bake for 15-20 minutes until mostly, but not all done.
  4. While that's happening, make the top layer. Mix together the flour, baking soda, and salt. Set aside.
  5. In the bowl of a stand mixer, beat the butter with both sugars until light and fluffy. Add the vanilla and egg, beating again until smooth.
  6. Beat in the dry ingredients until a cookie dough has formed. By hand, fold in the chocolate chips.
  7. After the initial brownie baking time, carefully spread the cookie dough on top of the partially baked brownies. Bake for an additional 20-25 minutes until golden.
  8. Cool and cut into squares. Store in an airtight container.

Mir

I fulfill many roles in life: wife, mother, teacher, everlasting learner. This site is dedicated to one role that expresses my creativity in ways that I find consistently challenging and rewarding: baker. Inventing new ways to enhance food, especially if that food involves chocolate or peanut butter (or both!), is a passion of mine. I look forward to sharing my ideas with you.

I can’t believe you just kept on teaching with a nosebleed! That’s dedication right there! 🙂 These bars look fantastic – anytime you combine two awesome things like chocolate chip cookies and brownies you can’t really go wrong. Pinned!

Thanks for pinning, Stacey! Honestly, I think I kept teaching because I wasn’t sure what else to do…

You’re a trooper, Mir! When I was student teaching, I came in during the worst sinus infection of my life. The students were so sweet and tried not to laugh at my funny sounding voice. The bloodshed could’ve been a visual aid for the end of the Great Gatsby, I suppose. Haha. These brookies are amazing. I’ve never combined the two desserts, but know I have to. I’ll be thinking about them all day.

I love being sick with students. They’re usually surprisingly thoughtful about being kind to you when you’re not well. You know, because you’ll get back at them later if they’re not. 🙂 You’re right, though, about bloodshed and Gatsby! Perfect!

  3. Gayle @ Pumpkin 'N Spice

I’m very clumsy so I can definitely relate! But I’m impressed that you kept on teaching with a nosebleed! These bars look like just the dessert to make you forget about that. Anything with double the chocolate is a winner in my book. Have a great weekend, friend!

Funny story: when I was in 8th grade, I took two classes at Whitman, and tried my hardest to be really cool and fit in with all the high schoolers. On the first day of second semester, in my new Algebra 2 class, I had a nosebleed all over my desk. And to make things worse, since blood is some sort of biohazard, they had to leave the desk there until building services could clean it with the proper materials. My dignity flew out the window pretty quickly!
These look amazing, love alllllll the chocolate 🙂

I get nose bleeds often and I’m a major clutz, so I can completely relate. I admire you for handling the situation like a champ in front of your students. These brownie cookie bars are genius might I add. The perfect way to recover from such situations. Enjoy your Friday!

Oh my gosh! And that, my friend is why I am a blogger and not a school teacher. Certainly there would be a blood gushing story of some kind daily for me and I would in no way handle it as gracefully as you. I love these! Pinning them!

  14. Jocelyn @BruCrew Life

I’m not sure I would have been able to carry on with a nose bleed…major props to you for keeping your cool. My youngest gets them all the time too for no reason, so I am used to handling him. Not sure I would do well with myself though! And these bars? Holy yum! Why have just one dessert when you can mash two into an awesome bar! Love it!
