College Dorm Brownies

When did I start baking? I can trace it back to my junior year of college.

I’ll get into why in a minute, but I was pretty much hooked from the start. What could be more amazing than dreaming of a dessert and then creating it? Sure, back then I needed recipes (I was very reliant on them), but it was still a lot of fun to cook in my crappy dorm kitchen.

These brownies are the first ones I ever baked from scratch, and the first baked good I ever added my own spin to. I used to call them “candy bar brownies” because they are very much like that. Rich, fudgy brownies are filled with peanut butter and milk chocolate chips, with a thick layer of the same on top. They’re crazy addictive!

This weekend, my family and I were invited to high tea with some friends from across the pond. I offered to bring a treat, so what could be more natural than scones?

Perhaps my British friends don’t do triple chocolate scones often, if ever. But there’s a first time for everything, and these deserve a lot of attention.

The base for these scones is cream, which works with butter to make these light as a feather while still full of rich chocolate flavor. Maybe people are out barbecuing this Labor Day weekend, but we’re having tea and scones instead!

School has begun, so the cookies are in the jar. Or in the office. As long as there are cookies, I’m happy!

These might look similar to snickerdoodles, but they’re not. Do you know why? Because I’m not that fond of snickerdoodles. They often have a crunchier texture and aftertaste that I just do not enjoy.

Cinnamon, though, is the best. So these soft-baked sugar cookies are rolled in cinnamon sugar and baked to happy perfection. These are the way to get your school snack munchies on!

Do you know what time it is? That’s right, kiddos. It’s back to school time!

As a teacher, I approach this time of year with a mingling of regret and excitement. I’m looking forward to a fresh new year, and I’m also looking forward to having my kids out of the house doing productive work. But you know, I do love the summer sunshine. And the flexible hours. So yeah…I’m torn.

With everything getting very busy (very fast, might I add), I need to be ready with great after-school snacks. When all of us get home from school, some refueling is definitely in order. These banana chocolate chip muffins are a perfect way to unwind and get ready for homework time, especially when I pair them with NESTLÉ® NESQUIK® Powder. It’s been a while since I made cookies, but I hope these make up for it!

Do you have a list of things you want to bake that’s about 17 miles long? I sure do. For at least a year and a half, I’ve wanted to bake these. The base recipe is in the Sally’s Baking Addiction cookbook (the first one), and I made one or two minimal adjustments, which I’ll explain later.

Suffice it to say, these don’t disappoint. They’re thick, chewy, and fudgy. Plus, they’re sprinkled with sea salt. Can a cookie get any better?

S’more Cookie Cups

You know, National S’more Day was last week. August 10th, to be exact.

I really wanted to post a timely s’mores recipe, but Kenny and I were away. And not only were we away, but we were also at a hotel hosting the Girl Scouts for National S’more Day. Talk about hitting pay dirt! There were s’more kits and fire pits everywhere.

Now that I’m back, I wanted to pay my respects to what is truly a marvelous holiday. Sorry if I’m a few days late! But these s’mores cookie cups should be worth it.
