White Chocolate Oreo Bars

I read last year that Oreos are highly addictive. Like, more than crack. I wouldn’t really know, because I’m not a crack kind of girl. I prefer my highs via sugar.

And boy, do I eat a lot of it! Whenever I see anything that’s cookies and cream in flavor, my heart soars a little higher and my mood lifts. There is nothing like that flavor combination. And when Oreos make their way into baked goods, it’s pretty much as good as it gets.

I’ve made brownies with Oreos before, but I’ve always wanted to try making a bar with white chocolate instead of regular. You see, white chocolate and Oreos is such an amazing combination. If you doubt me, try a white chocolate-dipped Oreo. It will change your life!

When it comes to baking with white chocolate, life can get tricky. It doesn’t melt the same way as regular, nor does it cool the same way. It seizes up much more quickly, so you have to really be conservative when you’re melting it. Otherwise, the chocolate will just separate and your recipe will bomb.

If you melt everything right, though, this recipe works beautifully. The bars are chewy rather than cakey, which is the ideal. They’re reminiscent of a blondie in terms of texture, but the taste is totally different.

Plus, these are just so pretty! I defy any Oreo lover to pass these without taking several bites. To resist just ain’t natural.

White Chocolate Oreo Bars

Considering that this recipe takes one bowl and is super quick, you don’t have an excuse any more. Oreos are addictive, so give in to the power and just enjoy the ride!

 

Ingredients:

  • 1/2 cup unsalted butter
  • 1 cup white chocolate chips
  • 2 eggs
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1 cup flour
  • 8 Oreos, broken into quarters

 

Instructions:

Preheat the oven to 350. Spray an 8 x 8 pan with cooking spray.

In a microwave-safe bowl, melt the butter and white chocolate chips for 1 minute. Stir until smooth, microwaving in 20-second intervals if needed to melt the chocolate. Do not overheat!

Stir in the eggs, sugar and vanilla until fully incorporated. Mix in the flour and stir again. Fold the Oreos into the batter, reserving a few pieces to press into the top.

Pour the batter into the prepared pan and put the reserved Oreos on top. Bake for 20-25 minutes until golden and set. Cool and cut into squares.
