The week should be winding down, which is good. My head is packed with to-do lists and tasks, and it’s always a good feeling when Friday evening hits and everything comes to a halt. No calls, no texts, no notifications. Just me and the fam!

When life gets crazy, cups of tea are important. Sometimes, I need a little more than just tea to calm down, and that’s where a good cookie companion comes into play. These Eastern European cookies are very similar to biscotti, but they’re built on a smaller scale and have a little more softness to them. The traditional version just contains nuts, but I added chocolate chips and a nice sprinkling of cinnamon sugar on top. You can’t go wrong with that!

Okay, that’s my life. I admit it. I have an ongoing love affair with brown sugar that is never going to end. Last week, we accidentally ran out of brown sugar, and I thought I was going to sit on the kitchen floor and cry. No baker worth her salt (or sugar, in this case) can do without the good stuff.

To apologize to brown sugar everywhere and make amends, I made these blondies. Blondies are the quintessential ode to brown sugar, a bar cookie packed with caramelized goodness. Plus, these are filled with butterscotch chips. That’s the life, baby!

I’m sure you’re all aware of the dangers of a CVS run, right?

Last week, I stopped by CVS for a quick trip to get some cleaning supplies. I’ve just moved into my new office space, and it was pretty dang dirty, so I needed to rush out right away and get cleaning spray, wipes, paper towels, the works. I was only going to pop in for a second.

But you know, CVS has the best stuff. Makeup and hair stuff and gel pens, oh my. And have I mentioned the bags of candy? Yep, I walked out of there with snack-sized Reese’s, Mega M & Ms and yes, fun-sized Snickers. Rather than eat the entire contents of each bag immediately while I cleaned dried-up Jolly Ranchers off a desk in the office, I chose to save them and bake this candy bar brownie cake instead.

Hidden Treasure Banana Snack Cake

It’s been a week of adjustment as I move from one school building to another and take on my new job responsibilities. I’ll be adjusting for quite a while, but there are some constants in my life that keep me grounded.

My family, of course. My kids are still at that age when they want me around all the time, so I’ve been peeling them off me as I head to the car to go to work. It’s a nice feeling, being wanted. I know they won’t always feel that way, so I’m enjoying that. And Kenny is my rock, the one who listens to me talk endlessly when I’m decompressing after a long day.

But let’s not forget you all! JAB is one of my constants as well, and I love the rhythm of baking for the blog. Nothing is quite so relaxing as mixing things together. This week, I decided that the tired bananas on my counter needed a little more than just the usual treatment, so I got sneaky and put a cheesecake filling into the center. Hello, beautiful!

Butterfinger Cookie Bars

Theoretically, we’re halfway through the summer after July 4th. But since the school year here didn’t end until June 20th, we’re not at the halfway mark yet. Nope, no siree! It’s in the 90s, my schedule is more flexible, and I’m getting in lots of quality family time!

There’s something really satisfying about hanging out with everyone when the weather is hot. We can log in lazy pool days, enjoy evenings in the cul de sac after dinner blowing bubbles with all the extra sunlight, and stop looking at the clock so much. We can also pause for afternoon ice cream snacks, and let’s face it. Those are the best. Right now my freezer is fully stocked with EDY’S® Butterfinger Peanut Butter Cup Ice Cream and EDY’S® Baby Ruth Ice Cream, and they’re getting a lot of attention. How could they not, when they’re inspired by two of my favorite candy bars?

Since you all know I’m the biggest bargirl ever when it comes to baking, I made a batch of Butterfinger® cookie bars to go along with my ice cream. There’s pretty much no greater combination in life than a good dessert bar and a bowl of ice cream.

It’s getting hot out there! My skorts are getting a lot of play.

Yes, I said “skort.” Before you assume that I’m dressing like a 2 year-old, they do make cool skorts nowadays that look like miniskirts but that have shorts under. It’s more ladylike not to flash people.

When it’s hot outside, I like to sit on my front step drenched in sunscreen and mosquito repellent. I’ll bring out a book, a cup of ice water, and a frozen treat. This week, these peanut butter fudge pops are getting a lot of play. They require only two ingredients, so get cracking!
