St. Patrick’s Day is Thursday, and I can guarantee you that I will forget to wear green. If anyone pinches me, you’ll get a reflexive elbow jab to the eye.
Okay, that was kind of harsh. But really, I don’t forget to wear green on purpose. I barely own anything green. I’m more of a black and gray kind of person with my clothing choices. That way, everything matches!
But with food? That’s a different story altogether. I love me some green food, and when there’s a holiday to be celebrated, that’s even better. These pistachio cookie cups are the perfect festive treat!
Let’s get back to the wardrobe for a minute, because I have often been mistaken for a vampire, thanks to my color choices. You see, I wear a lot of black. A lot. It’s partly because yes, it matches everything, but it also expresses my deep disapproval of winter and mourning for summer. Once the seasons change, the sundresses can come out of hiding!
Thanks to genetics and rigorous sunscreen usage, I have extremely pale skin. My students have accused me of being a vampire, and I don’t bother contradicting them. After all, fear can work to a teacher’s advantage. The contrast of very dark hair with my regularly ashen hue is definitely a motivator for the black clothing preference as well. It’s an exercise in contrast.
So yeah, when tomorrow rolls around, there will probably be no green. I won’t even pull out a green scarf because, nope, don’t have one. Or a pin. Does anyone in my generation wear pins anymore? They mainly serve to make holes in jackets.
Here’s hoping that nobody pinches you come tomorrow if you forget your green. If you walk around armed with pistachio cookie cups, they’ll like you too much to hurt you!
These are so easy to make. The base is a yellow cake mix, to which you add pistachio pudding mix and other basic ingredients. Then you bake them in mini-muffin molds and frost. Watch how easy this is to do!
I told ya. Easy. If you head to the store after work, these will be done in less than an hour. In the recipe, I use bought frosting to speed things up. You could use the kind that comes in tubs, or you could do my favorite hack, which is to buy a container of vanilla frosting from your favorite local bakery.

Preheat the oven to 350. Coat a mini-muffin pan with cooking spray. Set aside.
In a bowl, combine the first five ingredients. Mix well until a dough forms.
Spoon the dough into the prepared muffin pan. Bake for 10-12 minutes until set and golden at the edges. Cool completely.
When the cookie cups are cool, mix the almond extract into the frosting. Using a star tip, pipe swirls onto the cookie cups. Add sprinkles. Allow the frosting to set.

Have you ever been to DC? You know, our nation’s capital? If you haven’t, get down here immediately! There is so much to see and do, and a lot of it is free!
Well, kind of. The National Zoo is free, and they have a cute baby panda named Bao Bao. But in exchange for watching all of the adorableness as he tumbles down hills while trying unsuccessfully to stand up, you have to pay a $22 flat fee to park in the zoo lot. So it’s not exactly free, unless you want to go with street parking. Which you could, if you find a free spot. Or take the subway. But that’s not free either.
Okay, I’ll stop griping. Really, the National Zoo is very nice. Even with the absence of giraffes. And the monuments are free, too. And the museums. But not all of them! That International Spy Museum is a tricky biscuit.
When I was a young and inexperienced baker trying to make up recipes, I didn’t have much success. I mean, I was 15. The process of creaming butter with sugar was a completely terrifying prospect. And whipping egg whites until stiff peaks form? I still remember doing it by hand one day. It worked, but I was traumatized.
Now, many years and one Kitchen Aid mixer later, I am much wiser. But I still remember fondly the recipes that were not epic fails when I was just starting out. And one in particular that I kept making time and time again were these cookie cupcakes. Because they worked. And because they were actually delicious.
These are peanut buttery without being too sweet or over-the-top intense. They remind me of classic peanut butter cookies: same flavor, same happy nostalgic feel, same need for the glass of milk. But there’s more in each serving, more to bite into. The middle is nice and soft while the edges are chewy. And best of all, they have that Reese’s cup in the middle.
Last year was kind of tough. My husband, who is without any doubt the best human being on the planet (not that I’m biased or anything), had a lot of complications from his Crohn’s Disease. For those of you who don’t know what that is, Crohn’s typically inflames and attacks the intestines and colon over most of a person’s lifetime, and it takes some pretty strong medication and ongoing treatment to keep it under control.
Sometimes the medicine needs some help, though, and that’s where gluten comes into the story.
After a few hospital visits, we decided to try dramatically lowering my husband’s gluten intake, to reduce his dairy consumption, and to have him avoid white flours and refined sugars even when he did “cheat.” After all, it couldn’t hurt, and it might help.
Six months later? Wow. He does cheat sometimes, but he’s so much better. And I’ve gotten better at baking him recipes that convince him not to miss the wheat.

Don’t confuse my sunny personality with clothing choice, Alice! 🙂 Seriously, I wear a LOT of black. It’s just easier that way. And my mom never let me wear it growing up, so it’s probably some belated rebellion.
I don’t think I own anything green either – I practically live in black and I am happy with that. I am happy to partake in St Paddy’s Day by eating though and this looks like a good way to do that. Mir – I didn’t intentionally wear green today, but it happened. I need more pistachio treats in my life. I used to love pistachio ice cream as a kid, but I can’t remember the last time I had it.
