As long as the holidays keep coming, I’m going to keep baking pie! How can I not? Crust is just such a happy thing.

One of my favorite pies of all time is Dutch apple, and this pie goes to a whole ‘nother level with salted caramel on top. This kid’s a showstopper.

It’s funny, but I can pass up regular apple pie any day of the week. When it’s covered in crumb topping, though, just give me a giant serving fork and watch me dig in. I really can’t hold back. And ever since salted caramel became a thing, I just can’t get enough.

My first alcoholic drink of choice as a young woman was (this is embarrassing to admit) a Kahlua and cream. It was so delicious, like a spiked coffee drink. I thought it was heaven.

This one is making the Thanksgiving pie cut this year.

Every year, I bake a collection of different pies for Thanksgiving. And while my mind wasn’t even on November when I did this, it doesn’t matter. This pie is going down in history as one of the big winners.

Even if you don’t use this for late autumn, it’s a perfect transitional pie. It’s got ice cream in it for warmer weather, but pumpkin for autumnal cravings. Oh, and chocolate chips for chocolate lovers with a chocolate graham cracker crust. Have I mentioned that this is the best tart ever?

I’m kind of annoyed with dessert menus at restaurants.

First of all, they often just change seasonally, if at all. And when they do change, there are a couple of standbys that never shift. At any given time of year, you can be pretty sure that there will be crème brulee and molten chocolate cake on the menu, along with a fruit-based dessert (tart or crisp, usually) and an assortment of ice creams and sorbets.

Don’t get me wrong. I love all those things. But why can’t pastry chefs be allowed to really get creative? To have more fun? And, dare I suggest it, change the menu at least (gasp!) monthly? Would that be so terrible?
