Okay, kids, I’m gonna keep this one short. I was out late with the girls last night eating really amazing food and I’m worn out. I can’t party like I used to, which is a shame. But at the same time, I don’t really want to be up until two dancing the night away with bruised feet. I’d rather be in bed, snuggled up with my iPad and Netflix bingeing.

Anyway, the idea for these cookies came from a Godiva truffle. They have this summer ice cream parlor line, and the pistachio flavor is so incredible. I could eat way too many at once. They remind me a bit of marzipan, but with white chocolate in the mix. So amazing

Oatmeal Chocolate Chunk Cookies (With Oat Flour!)

Last year was kind of tough. My husband, who is without any doubt the best human being on the planet (not that I’m biased or anything), had a lot of complications from his Crohn’s Disease. For those of you who don’t know what that is, Crohn’s typically inflames and attacks the intestines and colon over most of a person’s lifetime, and it takes some pretty strong medication and ongoing treatment to keep it under control.

Sometimes the medicine needs some help, though, and that’s where gluten comes into the story.

After a few hospital visits, we decided to try dramatically lowering my husband’s gluten intake, to reduce his dairy consumption, and to have him avoid white flours and refined sugars even when he did “cheat.” After all, it couldn’t hurt, and it might help.

Six months later? Wow. He does cheat sometimes, but he’s so much better. And I’ve gotten better at baking him recipes that convince him not to miss the wheat.

Oh, I’m so ashamed. You see, I love throwing things away. I don’t save anything except the rare, unquestionably special school project.

Nutella Cookie Dough S’mores

Nutella Week continues on Just About Baked! Anybody with me on making this a national holiday?

A few years back, I almost got suckered into buying a s’mores kit. Have you seen them? They’re kind of awesome. There’s this little tiny fire pit (maybe two inches in diameter or so) in the middle of a circular tray that holds graham crackers, chocolate bars and marshmallows. You’re supposed to roast the marshmallow over the little fire and then put it all together.

Sounds good, no? Unless you’re me. See, I tried it, and then I set the marshmallow on fire. And then I screamed. A lot. Because fire terrifies me. Until my friend just looked at me and said, “I think you can blow that out.”

And you know what? She was right, and I did. And I screamed a little less the next time I made fire during an ill-advised foray into vodka sauce. But it was still traumatic.

M & M Cookie Bark

I’m back from sunny Williamsburg, VA, where my husband and I had a mini-vacation without kids. It was magical. If you’ve never been, you need to go! I’ll be sharing some of my favorite parts of the trip over the coming days. But first I have to share something else with you, and I’m excited.

Oh, my goodness. Hold on to your hats. Because I never realized that bark, one of the best treats ever, could be made in cookie form. Guess what? Epiphany time, people!

I was in the grocery store minus my children (wow, am I ever with them?) the other day, which is known in my world as a vacation. It was so lovely. I was wandering up and down aisles, looking at packaging without having to tune out a baby shrieking in my ear or feeling harassed, when I came upon the Brownie Brittle display. Have you seen that stuff? Basically, there are several different flavors of these thin, crispy brownie pieces. Some of them have chocolate chips, others toffee. It doesn’t really matter. The point is, when you bite in, you taste brownie. And I wanted to do the same thing, but with a cookie instead. So cookie bark was born!

M & M Cookie Dough Fudge Bars

When I was a kid, people didn’t worry about raw cookie dough. So I happily licked the beaters, knowing in my soul that eating batter was the best part of baking anything. But then the dark forces moved in and exposed the dangers of eating cookie dough.

I know a lot of people aren’t afraid. But me, I live in fear. I get nervous around fire and water, I wash my hands obsessively during flu season, and I always wait for the walk sign before crossing the street. Eating raw cookie dough used to be absolutely taboo. Until, of course, everyone realized it was possible to have your dough and eat it, too. Just don’t put in the egg, add condensed milk, and you’re good to go!

Gluten-Free Chocolate Chip Cookie Cake

Ah, the gluten-free life. It comes with so many challenges. My husband eats a mainly gluten-free diet, and he tends to try some baked good or other and then say, “It’s missing…something.”

To which I reply, “Um…wheat?”

Yep, it’s hard to make him forget just how great that gluten is. Which is why I’m so grateful that along with the recipes I make for him from scratch, there are people out there who make really good gluten-free refrigerated cookie dough. The Immaculate Baking brand is his (and my) favorite. The ingredients are free of chemicals and the cookies are nice and chewy. If you can’t find that brand at your local store, you can substitute two packages of your favorite gluten-free refrigerated cookie dough in this recipe.

Toffee Bars (Passover)

One of the reasons that I love to bake is that people find homemade goods to be really special. Though my mother didn’t bake super frequently when I was growing up, I loved everything she baked. My favorite recipe was her toffee bars, and I always associate those cookies with feeling happy and nurtured.

So as part of my Passover quest to bake desserts that taste as though they contain flour, I make these toffee bars annually as a tribute to my mother and as an excuse to eat one of my favorite cookies. They’re classic and the base is mainly ground almonds. Yay protein!

Welcome back to Passover Week on Just About Baked! Here today is yet another one of my favorites. I’ve never gone a week without eating chocolate chip cookies, and I don’t see why Passover should be any exception. Thus, this cookie!

A few years back, Martha Stewart put out a few gorgeous dessert cookbooks. One was just for cupcakes, another for pie, and then she also did a whole book devoted to cookies. I bought the whole series, of course. I mean, her stuff is amazing and makes me feel like a grubby little kid who can’t figure out how to make something as fabulous. But when I do make a Martha recipe successfully, I feel proud and happy with life. Go figure.
