Salted Oatmeal Caramel Bars

Salted Oatmeal Caramel Bars

Years ago, when I was still single in the city (and pretending I could be as cool as Carrie Bradshaw), I used to go to a place called Teaism. It sold lots and lots of tea, but also really good food. One day I walked in and noticed a salted oatmeal cookie. I remember thinking, “That’s gross.”

Oh, I was so young and stupid. The salted caramel trend was still a few years away from starting and I never stopped to consider that salted baked goods were the best thing to happen to the dessert industry since peanut butter and chocolate. But like I said, I was not that clever. I was in my twenties and had perfect skin. But I was dumb.

Anyway, eventually I climbed onboard the salty dessert bandwagon. And here I stay, until long after it will be considered trendy. I’ll be one of those annoying grandmothers who still bakes salted caramel stuff while her grandchildren roll their eyes and say, “But Grandma, it’s all about sardines dipped in ganache right now.”

Do you know how you imagine things one way and they turn out another?

That was my Memorial Day weekend. We had big plans. They involved a splash park and train rides and playgrounds and ice cream and picnics. Three days of fun, all planned out! No problem, right?

Except that my son spent a majority of the weekend on the couch moaning in agony with a stomach virus which I will no doubt be getting shortly, since I kept cuddling him and giving him tummy rubs. It was sunny and 85 degrees out, not a cloud in sight. And we were huddled in the darkened living room, taking occasional breaks from the moaning to watch episodes of Curious George.

I think I’ll just move Memorial Day to next weekend.

Every other morning when it’s still dark and everyone is asleep, I do my strength training workout. You see, I used to be just a cardio girl. I’d move and move and move and it was nice, but I didn’t see the results I wanted. I kept my weight where I wanted it to be, but I wanted muscles. Like Madonna. Totally doable, right?

Well, I’m getting there! About six months ago I discovered Physique 57. They have studios in big coastal cities and in places where really rich people live, like the Hamptons or Dubai. But they haven’t hit the DC area yet, so I sweat it out to the DVD collection and their online streaming. And it’s kind of addictive, mainly because I have muscles in places I never thought about before, and I really like that.

Anyway, I was working my abs to utter exhaustion the other morning when a recipe lightbulb went off in my head, apropos of absolutely nothing. I love it when that happens. It’s so random and so appreciated, like someone you don’t know about exists somewhere in your brain just to give you fun ideas. I love that someone!

Everywhere I look these days, I see ads for Botox. Is it just me, or is everyone offering to inject your face? First it was dermatologists. Then my dentist joined the game. I wouldn’t be surprised if they start offering Botox along with your latte at Starbucks.

It’s just not fashionable to age gracefully. Okay, cool. Though I sometimes wonder if the Botox makes people look younger. They just look…smoother.

But knowing me, I’ll probably be running to the needle soon enough. I’m very into trends. Fads are awesome. They’re totally logical and everyone should do what their friends are doing.

In the meantime, my secrets to the fountain of youth are simple. Sleep. Eat veggies and fish. Drink water and green tea. Use moisturizer and sunscreen, even when it’s fifty below zero outside (vampire skin is sexy). And eat peanut butter every day, preferably along with your daily hefty dose of chocolate. See? Simple!

Nutella Magic Bars

Nutella Magic Bars

It’s Nutella Week on Just About Baked! Why, you ask? Geez, why not?

Is it just me, or is there a very strong Nutella bandwagon out there? The people who have joined are fanatics. They put the stuff on everything. Kind of like how I am with peanut butter. I mean, I really like Nutella, but it’s a fondness and not a craze for me.

That said, I understand food loyalty. See the above comment about peanut butter. I put it in everything. So I wanted to make a recipe for you Nutella people out there, and this one’s a real doozy. It’s got two different layers that contain Nutella, plus hazelnuts and chocolate. You will fall out of your chairs, eat the whole pan and then not feel the slightest bit remorseful when that sugar crash hits. How’s that for a guarantee?

Key Lime Pie Bars

Key Lime Pie Bars

Once again, Friday is here and I’m in need of a serious dessert kick! It’s been a really nice week with Cinco de Mayo, my mini-vacation and the weather warming up, so let’s celebrate with some key lime!

I’m all about lime, all year long. But this time of year is special because it’s socially acceptable to like lime in May. In November, not so much. That doesn’t stop me from squirting lime juice onto everything all the time, from salads to fish to salsa. Mmm.

Key lime is even more fun. Those little limes are so cute! They come in a bag and they just look so happy that someone is loving them and using them in dessert. And boy, are they right. I don’t know what I’d do without those little suckers.

M & M Cookie Dough Fudge Bars

M & M Cookie Dough Fudge Bars

When I was a kid, people didn’t worry about raw cookie dough. So I happily licked the beaters, knowing in my soul that eating batter was the best part of baking anything. But then the dark forces moved in and exposed the dangers of eating cookie dough.

I know a lot of people aren’t afraid. But me, I live in fear. I get nervous around fire and water, I wash my hands obsessively during flu season, and I always wait for the walk sign before crossing the street. Eating raw cookie dough used to be absolutely taboo. Until, of course, everyone realized it was possible to have your dough and eat it, too. Just don’t put in the egg, add condensed milk, and you’re good to go!

Brownies And Blondies (Passover)

Brownies and Blondies (Passover)

Folks, Passover Week is drawing to a close on Just About Baked. Come Wednesday morning, I will be back to posting regular baked goods. Thank the lord and all the powers up above! I can’t take much more of this…

See, I miss the forbidden foods. Like pizza. And sushi. Oh my lord, a week without sushi is a very dark time in my life. You can imagine how well I got through three pregnancies without raw fish. It was a horrible time. So I guess I shouldn’t complain about one week. Especially when I can have brownies!

Toffee Bars (Passover)

One of the reasons that I love to bake is that people find homemade goods to be really special. Though my mother didn’t bake super frequently when I was growing up, I loved everything she baked. My favorite recipe was her toffee bars, and I always associate those cookies with feeling happy and nurtured.

So as part of my Passover quest to bake desserts that taste as though they contain flour, I make these toffee bars annually as a tribute to my mother and as an excuse to eat one of my favorite cookies. They’re classic and the base is mainly ground almonds. Yay protein!

Strawberry Crumb Bars

Strawberry Crumb Bars

Okay, people. I’m posting two recipes this week that involve a crumb topping, and how can I not? Crumb topping is one of the great joys of life. Any baker knows that when crumbs are involved, the ratio of crumbs to cake has to be disproportionate. As in, tons of crumbs. TONS. And just a bit of yummy cake.

Well, these aren’t cake. They’re bars. But really, who cares? It’s all about the crumbs, baby! And this simple recipe has crumbs upon crumbs to the point that they’re spilling out of the pan and straight into your mouth, where they melt as you sigh in ecstasy.
