Caramel Popcorn Nutty Bark

Caramel Popcorn Nutty Bark

I’m gonna make this one fast, because honestly, I’m a bit overextended. See, Thanksgiving took a lot out of me with all that pie-baking, and Friendsgiving a few days later also required pie. I need something simple here.

Enter my favorite quick recipe, so easy I hesitate to call it a recipe: bark! Two ingredients, everyone. Get excited!

Do you have a Thanksgiving food hangover? Can you take one more pie?

Sorry, but it’s still officially Pie Week here on Just About Baked. I see no reason to stop making pies. Why should I? As long as I’ve got breath in me, I will bake pies!

Don’t worry, this one is easy. And delicious. And holiday-esque. And gluten-free. And mint, which is highly rare on this blog. In case you missed it earlier, I’m not so fond of mint.

Okay, this is my third pie of the week. Don’t worry, I’m not tired of it yet!

Ordinary pie flavors are great, don’t get me wrong. I love pumpkin pie and pecan pie, and I’ve never been able to resist a good key lime. But I really like being creative when I bake, so a lot of what I do goes a touch beyond the norm.

When I first saw this recipe, I knew I had to make it. I initially glimpsed it on Pinterest, the home of all that is good. I think it originated with Martha Stewart. Anyway, I made one or two small adjustments and here we go! Chocolate pumpkin pie.

Chocolate Linzer Tart

Chocolate Linzer Tart

Welcome back to Thanksgiving Pie Week on Just About Baked! I’ve been having way too much fun with this, everyone. I’m getting my pastry chef alter ego out and dusting her off!

Today’s pie is really a tart, and I’m feeling rather European because it’s a Linzer tart. Translation: it’s got an almond base and there’s raspberry involved. I also worked in some dark chocolate for good measure. Can’t hurt, right?

Welcome to pie week! Well, mostly pie week. I’m going to be presenting three pie recipes for you today, Monday and Wednesday, just in time for Thanksgiving!

And these will be appearing on our Thanksgiving table, too, thanks to the glory of the freezer. So if you need a visual for Thanksgiving this year, just picture me eating lots and lots of pie. I’m also planning on doing a pies-in-review special after the holiday!

Help! There’s a chocolate shortage!

I’m not kidding, you guys. I just saw this article and I’m freaking out! I don’t want this to happen. How can we stop this from happening? Now I feel really awful about using so much chocolate all the time. This is my fault!

And this post isn’t helping, either. I swear I made these before I learned about the shortage. But I can see that really, using three times the amount of chocolate that I need to in a recipe might be going too far. But isn’t that what makes baking fun?

I’m about to go on a little rant here. Y’all ready?

I have very strong feelings about food safety. A few years ago, Nestle released a batch of tainted cookie dough and a few people ate it raw. One woman died. And Nestle closed their plant to clean it and disinfect it, but the bottom line is, somebody made a huge mistake.

The same thing has happened with bags of salad mix. I mean, really. Tainted spinach? And peanut butter. How did salmonella get into peanut butter? And of course, eggs and raw meats are always an issue.

After doing this baking blogging thing for a little while now, I’ve noticed something about people and their cravings.

As a whole, people like chocolate more than fruit. They especially like peanut butter with chocolate more than fruit, and I agree on that point a bazillion percent. While opinions differ in regards to many cookies, most people can’t resist a really good chocolate chip cookie.

And even fewer people will turn their noses up at anything with cookies and cream. In fact, whenever I make anything that involves Oreos, I have to hide in a corner while a stampede (comprised in part by people I don’t know that well, if at all) grabs at what I’ve done and totally eliminates its existence.

Hang on, kids. This is gonna be one heck of a ride.

Sometimes I don’t have to do any thinking. The wonderful food manufacturers do it for me. And I love them for it!

This past Sunday, I was embroiled in our weekly grocery trip. Translation: I was hoisting my 2 year-old on one hip, dragging my 4 year-old by the hand through the aisles, and snapping at my 6 year-old to stop touching everything he saw. That’s why I prefer to shop alone, but whatever. It’s usually not an option.

I’ve noticed that my fellow bloggers are moving on to peppermint. That means Christmas, right? No more pumpkin? But it’s not Thanksgiving yet!

And I might also take this moment to reveal that I hate mint. Put down that pitchfork! Sorry, but it reminds me of toothpaste. I can’t associate toothpaste with dessert. I’ve tried. I’ve failed. It’s over.

So will you see any mint recipes on this blog? Maybe. I can put aside my personal feelings and bake with mint every now and then. But I won’t be jumping on that holiday peppermint bandwagon. It’s just not who I am.
